Gluten-free Vegan Recipe: Sweet Potato and Black Bean Stew

It is not quite easy to cook if you are vegan and gluten-free, without soy and corn. Nevertheless, there are delicious dishes that can be cooked and to which you will be happy to return. This is one of them.
Sweet potato and black bean stew
250 g (1 can) black beans
300 g sweet potatoes
250 g canned tomatoes
1 clove garlic
50 g of spinach
1 onion
salt
black pepper
2 tsp paprika powder
2 tsp ground turmeric
fresh parsley
400 ml vegetable broth / broth
Lightly fry diced onion and chopped garlic in oil over medium heat. Add the diced sweet potatoes, black beans and spices and cook for a few minutes.
Add tomatoes, vegetable broth and stir. Let simmer for about 20 minutes.
Finally, add the spinach and season with salt and pepper. Serve with chopped parsley and cooked rice.
