Unique gourmet hand-picked wild and garden Arabica coffee from the rainforests of the Kaffa province in southwestern Ethiopia. Dark Italian roasting means the full and intense flavor of this top-quality, strongly roasted coffee suitable for an espresso or mocha pot. The CO2 method for decaffeination of coffee is expensive, but it preserves the aroma, full taste and does not harm health. The method developed at the Max Planck Institute requires demanding equipment for a pressure of up to 300 bars, but it is extremely gentle on the coffee and preserves the overall better properties of the coffee. It replaces all chemical solvents with high pressure and simple carbon dioxide, which is naturally found in the air. Soft vacuum packaging with coffee valve preserves the aroma of roasted coffee well.

The very name of the Kaffa region speaks of the ancient truth that this is the cradle of coffee, which later spread throughout the world. And right here, in the natural environment of the Bonga rainforest, the original variety of coffee has been growing for millennia without plantations or breeding stations. The plant has low yields, but invests in incomparable quality and fragrance as well as diversity between individual bushes.

In the Polish roastery, the master roasters then mix this wild-growing coffee with Arabica grown in the surrounding gardens of the Kaffa region in accordance with the rules of organic farming and roast it heavily in the Italian way. The so-called Italian roasting requires real experience from the roaster because it is at the end of the second crack and is only a moment away from burnt coffee. Italian style means coffee already completely without acidity, all the sugar in the beans is completely caramelized at this stage, greasy spots appear on the surface of the dark brown beans. The original coffee taste is suppressed in favor of a dark roast taste.
Fair trade terms (specifically Fair for life certification) and cooperation with the German Nature Conservation and Biodiversity Association NABU guarantee a sustainable perspective for small growers and collectors, for whom coffee is the main source of income, and the protection of local rare forests.

 

Treasure in the rainforests of the Kingdom of Kaffa

The impenetrable montane rainforests of the ancient kingdom of Kaffa in southwestern Ethiopia are considered one of the world's 34 biodiversity hotspots. They are real treasures of nature and home to many animal and plant species that cannot be found anywhere else in the world. Lions, leopards, wild cats as well as pigs and antelopes live here, and the curious black and white guereza monkey has created its own subspecies. The area is home to more than 100 species of birds and is therefore internationally recognized as an Important Bird and Biodiversity Area (IBA).
Massive giant trees, a tangle of aerial roots, fascinating epiphytes, glittering greenery all around - the forests, of which only a remnant of their original size remains, still hide a real specialty: wild coffee (Coffea arabica), a genetic source of inestimable value. Nine months after flowering, rainforest coffee trees bear red, cherry-like fruits that have two flattened seeds, green coffee beans, inside under the flesh.

 

Establishment of the first UNESCO coffee biosphere reserve

However, illegal logging, expanding farmland and cities are seriously threatening the existence of these valuable natural areas. Between 1988 and 2008, about 40% of local forests disappeared, which also threatens the fight against climate change, forests are, among other things, essential carbon stores. Our importer Original Food and the oldest and largest ecological association in Germany, NABU, are therefore intensively advocating in a joint project for the sustainable development and thus the protection of these unique rainforests. Supporting the sale of local products and the development of ecotourism creates new income opportunities for the local population, and thereby demonstrably reduces the pressure on natural resources. Selling wild coffee at fair prices is an incentive for farmers to maintain and protect the mountain rainforest while improving their income.
NABU (The Nature and Biodiversity Conservation Union) was founded in 1899 and today has the support of more than 900,000 members and supporters, whose common goals are to protect habitats and biodiversity, promote sustainability in agriculture, forestry and water supply, as well as increase the importance of nature protection in society. By purchasing this coffee, you are directly supporting the preservation of Africa's unique nature; from each kilogram of coffee sold, €0.40 goes directly to local NABU projects.

From the beginning, since 2003, we have paid small growers fair prices for their production, because that is the only way it makes economic sense for us and them in the long term and sustainably. Only then can we demand, in addition to harvesting, the preservation of rainforests in a healthy state. The project resulted in the establishment of the world's first UNESCO coffee biosphere reserve and is today considered an excellent example of nature conservation and economic development simultaneously. Today, about 130,000 people in Kaffa province are benefiting from this success story, and since 2016 it has also given perspective to another 20,000 people in the neighboring Sheka region.
